Truffles
The truffle is simply put is the most celebrated, expensive, and misunderstood
ingredient of Italian cooking. There are many species that vary in taste,
price and renown. While without a doubt the white truffle is the most
famous but there are many varieties that are edible that are delicious.
What are truffles?
Truffles are a fungi that grow underground, close to trees or bushes
with which they live in symbiosis, exchanging essential nutritional
substances. There are more than twenty five varieties of truffle in
Italy; but only a few are edible and have commercial significance.
Where to find them
The presence of truffles is connected with those species of trees and
bushes which are commonly found in Tuscany, such as oak trees, poplars,
willows, lindens, pines, hazelnut, and cistus trees inside woods either
as isolated plants or in rows. However, each variety of truffle has
its own specific area of growth. In general, the most valuable truffles
are also the rarest. Because of the varied types of environment in Tuscany,
all types of edible truffles may be found there, from the most prized
to the so-called “lesser” varieties.
How to find them
Truffles are found with the use of specially trained dogs that use their
keen sense of smell. These dogs can detect the truffles through the
grass, leaves and ground. The dogs are a special breed called Lagotto
Romagnolo and are trained from an early age so by the time they reach
their true potential, they are worth tens of thousands of Euro.

We invite you to a one-day adventure to discover the secrets of the
truffle, where you will be involved in a fascinating hunt on private
reserves. You will be guided by our expert truffle-hunters who will
give you explanations and information about the area and the truffles
themselves.
After the hunting, we will head towards Figline Valdarno where our truffle
experience will culminate in a cooking class where you will cook with
truffles and feast on one of the most memorable meals of your life.
We strongly recommend that you be in good health and be able to walk
on rough terrain. Wear comfortable shoes and casual clothes appropriate
for the season.
